In keeping with tradition, making honey biscuits was one of the Christmas activities in Ava and Lola's advent calendar; the most delicious activity in the advent calendar!

Honey biscuits are a little softer than gingerbread and even more delicious. I'm yet to meet someone who doesn't love them - and my mum gives them out to everyone!
Yesterday the girls and I made our honey biscuits for Christmas. We'll share them with friends and Ava's classmates and I'm sure we'll eat many of them ourselves!

I made the mixture in advance on Monday night as it needs to be left in the fridge for at least a few hours, ideally over night. We then got to the fun part after school yesterday - rolling and cutting out the shapes. In keeping with the Christmas theme we made snow flakes, stars, gingerbread men, Christmas trees and candy canes. As we made so many biscuits we covered them with sprinkles prior to baking rather than icing them. Much, much fast and easier for my little helpers (and me!).

Thinking you might like to make some honey biscuits yourself? Yes? Of course you are! Well, here's the recipe. Get baking!
Ingredients
4 oz Butter
1 cup hot water
1 kg Honey
4 Eggs
4 tsp cinnamon
4 tsp ground ginger
1 tsp salt
1 kg sugar
2 kg plain flour
4 tsp bi-carb soda
Note: This recipe makes a HUGE amount of biscuits. I usually halve the recipe.
Method
Over a low heat melt the butter in a saucepan. Add the sugar and honey. Stir until the honey has melted and the sugar has dissolved.
Remove from heat and add eggs, one at a time.
In a separate mixing bowl sift the flour, and mix in cinnamon, ginger and salt.
Add the melted butter, honey, sugar and egg mix to the flour mix and stir through.
In a separate bowl mix the bi-carb soda and hot water. Gradually add to the rest of the mixture and stir through.
Leave the mixture to stand for a couple of hours in fridge. I usually leave it overnight.
Roll out the dough on a floured surface and cut into shapes.
Glaze with egg yolk and cover with sprinkles. Alternatively you could leave out this step and ice the biscuits once cooled.
Bake for 10 to 12 minutes in a moderate oven (190C / 375F).
