The kids have been back at school and their regular activities for a week now. While that means I have a little extra time during the school day to get things done, it also means that I am much busier after school. Between karate class and swim team/swim classes, we've got after school activities five days a week. That's five days a week that we're not home before 5:30pm at the very earliest, which means that's five days a week that I find myself scrambling to get something made for dinner.
As we live on top of a Trader Joe's supermarket, our dinner often comes in the form of their ready meals. It's quick and easy, and most of them are pretty tasty. However, they're not always the healthiest option and I miss the satisfaction of knowing that I made dinner from scratch.
I'm always looking for new quick and easy options for dinner so when I heard about Gobble dinner kits I was excited to give them a try. Imagine this... a healthy and tasty home made meal cooked from scratch in just ten minutes! No peeling, no chopping, no measuring amounts... None of that time consuming stuff that stops me from making home cooked meals. Just fresh, ready chopped ingredients, perfectly portioned and ready to cook in just one pan. Oh, and less clean up too! Perfect!
We gave Gobble a try last week and made two super tasty meals: Chicken Tikka Masala with Rice and Naan, and Miso Glazed Salmon with Soba Noodles and Edamame. Both were so easy to make that the kids were able to help out which was great. They love being helpers in the kitchen but with their busy after school schedule we don't always have time.
The kids were pretty excited when the big box of ingredients arrived. They couldn't wait to see what was inside. As it's not always possible to be home when the delivery from Gobble arrives, everything is packaged to stay fresh throughout the day. The box is lined with a jute packaging for insulation and contains several ice packs along with the food. The combination of this packaging and the ice packs is so good that I actually reused them for our camping trip over the long weekend instead of buying a cooler!
Inside the box we found all the labeled ingredients we needed for our two meals along with very clear step by step instructions.
We decided to make the Chicken Tikka Masala first and Lola acted as my little helper. Here's a look at the super simple steps we took to make this tasty meal.
Following the instructions, we melted the Indian Spiced Butter in a pan, then added the Tikka Masala Marinated Chicken. The instructions warned that there may be a bit of splatter at this step so Lola was ready with the splatter guard!
Once the chicken was cooked through we added the Indian Sofrito sauce followed by the yogurt.
Once the chicken was done we turned off the stove and moved onto the naan and rice. We placed the naan on a baking tray and into a preheated oven, and the rice into a microwave safe dish and into the microwave. A few minutes later and they were both done.
We then served everything up along with the cucumber salad that came with it. Easy!
The Miso Glazed Salmon with Soba Noodles and Edamame was just as quick and easy to prepare and oh so delicious. There was enough of the noodles and edamame left over that I was able to eat it for lunch again the next day too.
