My Favorite Lemon Chicken Recipe



When I think of comfort food from my childhood there is one particular dish that always springs to mind: my Mum's Lemon Chicken. The sauce is so tangy and delicious with its combination of lemon, garlic and soy sauce. It's the one dish that I find myself literally licking the plate clean afterwards! I just can't get enough of that sauce! Not only is it super tasty, but it's a dish that brings back memories every time I eat it. Lemon chicken was always my favorite dish when I was a kid and even after I moved out of home, my Mum would make sure to serve it up for dinner when I visited - with lemon meringue pie for dessert. Can't just stop at one lemon dish for dinner!


I've been meaning to share my Mum's Lemon Chicken recipe here on Little Hiccups for quite some time, so when the opportunity to work together with Foster Farms came up, I knew it was the perfect time to share. Locally grown chicken, raised with no antibiotics ever, baked in my favorite tangy lemon sauce? The perfect combination!



If you love lemon like I do, I just know that you're going to love this recipe.

What you'll need
For the sauce:
1 dessert spoon soy sauce
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup olive oil
1/3 cup lemon juice (fresh or concentrate for a tangier flavor)
1 or 2 cloves of garlic

For the chicken:
6 - 10 pieces of chicken (on the bone)
1/2 cup plain flour
1/4 teaspoon pepper
1 teaspoon salt
2 teaspoons paprika
1/2 cup butter or margarine


To make the sauce, combine all of the sauce ingredients in a glass jug. Stir and refrigerate covered for at least an hour.


Preheat the oven to 375F (190C).

Prepare the chicken by mixing the flour, paprika, salt and pepper together in a bowl.


Dredge the chicken pieces one at a time in the flour mix.


Arrange the chicken pieces skin side down in a lightly greased baking dish. Melt the butter/margarine and brush well onto the chicken.


Bake uncovered for half an hour.


Turn chicken pieces over and pour the sauce mixture over the top.


Bake for a further half hour or until chicken is golden and tender.

Serve with your favorite sides. Make sure to scoop up extra sauce from the bottom of the pan and pour it over the chicken.


Tips:
You can use either fresh lemon juice or concentrate for this dish. As the concentrate is, well, concentrated, it will result in a tangier flavor. If you'd prefer to use fresh lemon juice but would like it super tangy, just increase the amount of juice used.

You can reduce the salt content a little by using tamari instead of soy sauce.

Margarine can be substituted for the butter.

Make sure to cover the sauce when you refrigerate it. This may be my favorite ever sauce, but it's not necessarily a flavor I want everything in the fridge tasting like! If you don't cover it, you may find the rest of your food tastes like garlic and lemon!

You can use any chicken pieces that you like, but it definitely tastes best on the bone. I've tried it before with breast meat and while it was good, the flavors just don't infuse the chicken as much as they do with drumsticks or wings.

To give your family the best, make sure to use chicken raised without any antibiotics. Foster Farms chicken is a great choice.
